Savory Black Pepper Oyster Mushrooms: A Simple, Flavorful Recipe

Our favorite savory mushroom stir-fry with caramelized shallots, garlic, and ginger, all in a rich soy glaze—perfect served over white rice.

Serves 2-3

Ingredients:

1 bunch green onions, whites and greens separated

1/4 cup olive oil 

4 shallots, peeled and thinly sliced

4 garlic cloves, peeled and sliced

1 thumb-sized ginger root, peeled and minced

1 red or green chile (optional)

2 lb oyster mushrooms, cut into 1/2 inch thick pieces

6 tbsp soy sauce

1 1/2 tbsp sugar

1 tsp black pepper

cooked white rice for serving

Directions:

Thinly slice the white parts of the green onions. Cut the green parts into 1/2 inch pieces. Set aside.

In a cast iron skillet or other large skillet over medium low heat, add the olive oil.
Once shimmering, add the white parts of the green onions, shallots, garlic, ginger, and chile. Cook, stirring frequently for 10-15 minutes, or until the shallots begin to caramelize and are completely soft.
Add the mushrooms and cook for another 5 minutes, stirring frequently.
Add the soy sauce, sugar, and black pepper and stir.
Add the remaining green onions and stir. 

Remove from heat and taste for salt. Serve with rice.
