How to store your mushrooms
Most gourmet mushrooms will store in the refrigerator for several weeks past their harvest date.
Ideally, they are kept in a breathable container such as a paper bag or cardboard box, such as the boxes that come with our fresh mushrooms. Another way we like to store them is in a bowl wrapped in a dish towel
Mushrooms can be dehydrated in front of a clean fan or using a dehydrator and kept in an air-tight jar for long-term storage.
We use this dehydrator.
How to REHYDRATE your mushrooms
Submerge the mushrooms in a bowl of room temperature water. We like to salt and add vegetable bouillon to the water, for a savory kick. Let them soak until they resemble fresh mushrooms (1 hour to overnight depending on the size and density of the mushrooms, smaller mushrooms will rehydrate more quickly)
Remove the mushrooms from the water and pat dry with a clean towel.
For quicker rehydration use hot (but not boiling) water and stir occasionally .
Cooking suggestions
Dry sauté in a skillet, we prefer cast-iron over medium-high heat for about 5 minutes until the edges are browning.
Add onion, garlic, peppers, seasoning etc. (anything you’re flavoring with) and your fat (oil, butter or ghee).
Cook until caramelization occurs, 5-10 minutes, over medium heat. Remove from heat and enjoy!
* Always cook your mushrooms until they are well-done.
